Egg-whitey scramble

A mostly egg white omlette. A yummy 273 calories per serving.

6 slices healthy choice ham
2 tsp. Canola oil
2 egg whites
1 whole egg
1 hot serano pepper
2 chopped green onions
2 large mushrooms sliced
Fresh herbs to taste

1/8 c. Kraft-Free shredded cheddar cheese
salt and fresh ground black pepper to taste

You will need: A mixing bowl, small fying pan

Slice ham into thin strips. Heat the oil in the frying pan over mdium high heat. Add ham and gently brown. Add pepper and onions stir until onions start to clear.

In a bowl, scramble eggs, incorporating salt, pepper and herbs.

Making sure your frying pan is hot, pour in egg mixture. As eggs set, draw the edges to the center of the pan, exposing liquid egg to the pan. When eggs are about 50% set, sprinkle cheese over eggs and fold in.

Cook until eggs reach your preferred hardness.
